Oatmeal coconut cookies
Ingredients:
350 grams butter, room temperature
350 grams butter, room temperature
100 grams sugar
200 grams brown sugar
2 eggs
1 ½ tsp vanilla essence
200 grams oatmeal
200 grams shredded coconut
½ tsp salt
1 tsp baking soda
½ tsp cinnamon powder
150-200 grams flavoring of your choice, e.g. raisins, dried cranberries, chocolate drops, nuts or dried apricots.
Preparation:
1. Preheat the oven to180°C
2. Whip the butter in a mixer until it is light and fluffy.
3. Add the sugar and whip for a while.
4. Add the eggs and whip further for 2 minutes.
5. Add the vanilla essence.
6. Mix together the flour, baking soda, cinnamon and salt and add gently to the egg/sugar mixture using a wooden spoon.
7. Add oatmeal and shredded coconut, mixing everything together.
8. Add you flavoring of choice.
9. Line a baking tray with baking paper and put a tbsp of dough for each cake. Have a fair amount of space between the cookies as they tend to run a bit.
10. Bake for 10-12 minutes or until the cookies are golden on the bottom.
11. Let the cookies cool for at least 20 minutes before eating them.
