February recipe from Iceland

The universal bread – great with a bowl of hot soup

Ingredients:
500 gr flour
100 gr whole wheat flour
½ cup seeds (sunflower, sesame, pumkin)
½ cup sugar
1 tbsp dry yeast
½ liter warm water
½ dl oil

Filling:
Spiced feta cheese, olives, sun-dried tomatoes.





Directions:
1. Preheat the oven to 180°C
2. Mix all the dry material.
3. Add the warm water and the oil and knead well.
4. Divide the dough into two pieces.
5. Roll out one of the pieces on a baking sheet.
6. Put feta cheese, chopped olives and chopped sun-dried tomatoes on top of the rolled out dough.
7. Roll out the other half of the dough and put it on top of the one with the filling. Push well together, especially the edges, using your fingers.
8. Brush the top with some oil and sprinkle with some coarse salt.
9. Bake for 15-20 minutes or until golden. Use a pizza wheel to cut into slices.
