December recipe from Iceland

Peppercookies - traditional Nordic Christmas cookies

This type of cookies is made throughout the Nordic countries. The spices bring the smell of Christmas.


Ingredients:
350 g flour
100 g sugar
50 g dark muscovado sugar
100 g butter or margarine
2 tsp baking powder
1 tsp baking soda
1 tsp cloves
1 tsp cinnamon
1 tsp cocoa
1 tsp allspice
1 tsp ginger
¼ tsp white pepper
1 egg, beaten
½ dl milk


Directions:
1. Preheat the oven to 175°C
2. Put all the ingredients into a mixing bowl and use the dough hook to knead everything together.
3. Good to put the dough into a fridge for a while and let it cool (not a necessity).
4. Roll the dough fairly thin with a rolling pin and make cookies the way you want. In Iceland we usually use cookie cutters in all kinds of shapes and sizes. You can also make small balls.
5. Bake for about 10-12 minutes.
6. Cool before you start decorating.




To decorate you use either ready made frosting or make your own frosting with icing sugar, water and food coloring.
